CHRISTMAS CUPCAKES

CHRISTMAS CUPCAKES

This is a very simple recipe. While
my Mom made homemade cup-
cakes, I used a chocolate box mix.
(or any flavor.)  You can even use
ready made icing (vanilla), tint
it green, pop in a small candy
cane and you're set to go.
Icing recipe:
1 cup very soft butter
1 tsp vanilla extract
1 tsp mint extract
1 to 2 tbsp. whipping cream
     ( I use regular milk)
green food coloring (to
     desired color)
3 cups powered sugar
Using mixer, mix together
sugar and butter, on a low speed until well blended and then increase
speed to medium and beat for another 3 minutes.
Add vanilla, milk, mint extract and continue to beat on medium speed
for 1 minute more, adding milk if needed for spreading consistency.
Tint the frosting to desired color ( 1-2 drops)
Spread on cupcakes. Makes about 24.
Put into each cupcake, 1 unwrapped small candy cane.
