Easy Pesto


Ingredients: Makes about a cup

2 cups fresh basil ( I used from my garden)
1/2 cup grated parmesan cheese ( freshly grated)
1/4 cup toasted pine nuts or almonds, ( I used pine nuts)
1-2 cloves garlic (fresh), chopped ( depends of your taste for garlic)
1 tbsp. lemon juice ( fresh lemon)
1/2 tsp kosher salt
1/4 tsp coarse black pepper
1/2 cup extra virgin olive oil

* Toast the pine nuts in skillet for 5 minutes over med. heat till light golden. cool
* In food processor put in everything but the oil
* Turn on and slowly drizzle in olive oil, until incorporated and smooth
* Taste, add salt or pepper if needed
* Refrigerate
