MOM'S MEATLOAF RECIPE
Ingredients
1 1/2 lbs. ground chuck
1/2 lb. ground pork or sausage
1 small onion diced
1/2 of a lg. green pepper, chopped
1 pkg. of saltines crushed
2 eggs
1/2 cup tomato sauce
1/4 cup milk
1 tbsp. worcestershire sauce
1/2 tsp. garlic powder
1/2 tsp. salt, 1/2 tsp. pepper
Preheat oven to 350 degrees
Mix together all ingredients till combined
Form into loaf and place on a foil lined
flat baking sheet
Top with ketsup or barbecue sauce to cover
entire top.
Bake uncovered 60 minutes or until
meatloaf reads 160 degrees on a meat
thermometer
to check this I took out after 60 minutes, checked it and the temp. was 154. Covered it and left it
for 10 minutes. This brought the temperature up.
Typically I don't check a meatloaf with a thermometer, I just take it out after about and hour
and let it set for a bit.
This is a very good recipe, my mom's and it has held up over the years.
